I have a 5" TFT laying around, and its only 1/2 inch thick. It may bulge out the other direction, but it can fit into a visor.

although most of these link though commission junction .. there are a couple good TFTs listed on this site.

The LCD's i have are Farenheit and they are super thin, and don't bulge that much at all. The sunvisor was rewrapped in leather, and looks awesome. Its a good route to go, but i'd get navigation as well, so it actually serves a purpose

My local shop mentioned a few different GPS systems that use existing LCD screens and a remote as the form of interaction. If your really that interested in knowing what brand and model, i can ask for you.
