Lightest S2k?
There is PLENTY of stuff you can do with the front!
Remove the front bumper support bar. I have one sitting in my living room and I weighed it at 9 pounds. Relocate a drycell battery to the trunk. My J's header lost 13 pounds. Empty windshield washer reservoir. That right there is -55 pounds from the front, and an additional 11 pounds in the rear. Now, gut your trunk (including the glue underneath the carpet) for -43 pounds. Now, you're balanced once again and you've lost around 80 pounds.
A single exhaust loses around 50 pounds. If you want to keep the weight better distributed you can go with a lighter radiator. Lightweight wheels, calipers, and coilovers lose unsprung weight and keep the same balance front and rear with no ill-effects.
For "tracking" my car is under 2500 pounds not to mention the unsprung weight.

Even for what it is, the S2000 is a very heavy car. I feel the excess weight every time I ride in another S2000. A friend of mine only has intake and hacked off mufflers and his car feels MUCH faster than people who've spent a few grand on intake/header/exhaust and whatnot. Why? He's shaved around 120-130 pounds out of the car.
I recently walked a turbo 240sx (probably an sr20, a lot of people do those here in atlanta) from 2nd to 3rd gear (right in it's powerband) and I have no doubt that it is because of my weight loss. When other S owners ride in my car, they instantly comment on how nimble it feels. I usually get a "damn this thing is light" comment before I'm even out of a parking spot!
I am a lightweight freak at times. If I'm not going to be driving my girlfriend anywhere, I leave my passenger seat at home. People laugh and think I'm dumb because I can't give other people rides much but I don't care. A lighter car is more nimble, tossable through the turns, acellerates quicker, and brakes faster. Granted, my gears are the other half of all of this but still, shed the weight and walk some turbo 240s
