Also, another tip that I've been told by a couple of race car drivers and seen mentioned on tv: Don't 'white knuckle drive'....you gotta keep a loose grip on the wheel. I find myself mentally reminding of this from time to time still, even after 13 years of driving.
I used to have this same problem. I solved it by taking things slow first and making sure I shifted correctly. As they say in music, being slow and accurate at first allows you access to become faster; you can't start out fast and improve your accuracy (even if you are able to somehow it takes you a much much longer time).
As long as you're shifting while driving in a straight line, practice unwrapping your fingers from the steering wheel but keeping the pad of your hand just below the base of your fingers on the wheel. Do this while shifting and you shouldn't be jerking the wheel. But this is only to help you while practicing being more relaxed. When you're more relaxed at shifting you can keep your fingers wrapped around the wheel. Like XScarAudio said, a lot of us have to keep reminding ourselves of this due to relapsing or just having stressful days.
Like others have said, you should not be shifting while in a turn so if you need to solve this issue too then you need to practice heel-toe shifting if you're braking into a corner so you can be in the proper gear through the corner and for the exit.

speedshifting in the S is almost useless unless your drag racing it. to me it seems like its the quickest way to damage your 2nd gear syncros which is a common problem with acura/honda trannys.
from my experience there are cars that respond well to that sort of driving the S on the other hand likes it when your gentle and smooth.

Very common problem. Your corpus callosum is well formed. I recommend disassociation exercises. Take your right hand and rub your belly. Take your left hand and pat your head. Repeat and switch. Keep doing until you've trained your hands to do separate things. Good luck
Practice jerking off with your left hand while you work the mouse surfing $$$$$$ with the right. It won't make you a better speedshifter, but the splooge on your left palm will make the steering wheel slip enough it won't move

i remember first few times I drove the car, shifting felt strange, in time i began to realized it wasn't me, it's the natural feel of the gear box. It's notchy, and feels like if you don't shove the shifter with authority that it wants to kick it back out. but shoving it is not the answer, push it in with a little force, don't slam it in. also the clutch is finicky, u have to push the clutch pedal all the way in before shifty, if you shift out of gear with clutch half way down(or still engaged, yes, i did that, car doesn't like that), u get a thump, and if you release the clutch pedal to early before shifting completely, u grind. It's all about timing. My experience getting acquainted with my car.
