Paranoia...
Hi!
So I just got this S2k, however, I'm still think of what can possibly happen to the car if I leave it in a parking lot for long periods of time. I'm not trying to get my roof slashed up, or my seats stolen, so is there anything I can do for reassurance, aside from getting a hardtop?
Oh and obviously I'm new here, but the introduction will come soon enough.

I'm sort of in the same boat as you. My neighbor told me someone appeared to be scoping or checking out my car at some point, and from then on I became very paranoid. My S2k has actually been garaged for a while, and I'm going to finally retrieve it within a month or so. I've got the wheel locks and seat locks, and I'm looking at alarms. My biggest fear is having the top slashed or seats slashed for no apparent reason.

It's a car... there's no point in letting 'paranoia' hit you over a material object. Worst case scenario, it gets replaced. I used to park top down, on the street in Richmond, CA (aka the hood) over night for 7 months. I still have my seats. It'll either happen or it won't; dreading it won't influence those chances one bit.
Otherwise Kodokan seat locks should do the trick (or there's been a few 'DIY' variations). Past that.......

p.s. A hardtop might stop your lookey-loo common thief; but any thief that knows what their doing, a hardtop is no more of a security than a soft-top. Just more inconvenient for them.

As I said earlier, I got really freaked out after I was told some dude was scoping out my car. My response was pretty dramatic -- garaging my S2k for months and months. My bro has been out of country for some time, so I've been able to use his car. At this point though, I'm really tired of not driving my "baby" and I want back in the driver's seat. I'm going to reward its patience with some nice electronics upgrades.
Other than using some common sense, like parking in well lighted areas, getting seat locks and wheel locks, and a few other potential measures, at some point there's just nothing more you can do. A truly determined thief is going to meddle with the car if he wants. If something bad happens, I'll file an insurance claim. Bad things can happen to anyone. My rec is to use common sense, and to take precautions when necessary, but don't overreact like I did, and don't spend every day worrying about the "what ifs." Just enjoy the car, and deal with problems should they arise.

I have left my car at LAX top down for a week several times. Top down parking is something you get used to after driving a convertible for 34 years, unless its pouring down rain, my car is top down when i am driving it and when its parked. You will get used to it.
Definitely buy seat locks. Lots of S2000 seats have been stolen, so that was also my biggest concern. In addition to the seat locks, I also bought seat lock warning stickers, just in case they help save my top.
This is why I would not enjoy owning a nice car living in a city or apartment complex.
I love living in the country...no one would dare come onto your property to steal something for fear of dogs or being shot by the owner.
(edit: both of which are very likely if someone tried to steal my seats)
