Paranoia...
It's a car... there's no point in letting 'paranoia' hit you over a material object. Worst case scenario, it gets replaced. I used to park top down, on the street in Richmond, CA (aka the hood) over night for 7 months. I still have my seats. It'll either happen or it won't; dreading it won't influence those chances one bit.
Otherwise Kodokan seat locks should do the trick (or there's been a few 'DIY' variations). Past that.......

p.s. A hardtop might stop your lookey-loo common thief; but any thief that knows what their doing, a hardtop is no more of a security than a soft-top. Just more inconvenient for them.

This is why I would not enjoy owning a nice car living in a city or apartment complex.
I love living in the country...no one would dare come onto your property to steal something for fear of dogs or being shot by the owner.
(edit: both of which are very likely if someone tried to steal my seats)
