So what exactly is the technique to get the S to do good off the line? I've heard drop the clutch at 7000 RPM, but do you ease the gas after that, or floor it? Wouldn't you get a lot of wheel spin?

you get wheelspin for about 1-2 secs until the wheels grab.

yes. if you're quick enough, while keeping your foot on the accelerator, depress the clutch and shift.

For off the line, the one time I launched for max effect was by revving to about 6-6.5K, sidestepping the clutch so it pops up (no feathering or slipping whatsoever) lighting up the rear tires, and Woohooo. Anymore than 6.5K and I think you're just making expensive smoke and no immediate conversion into forward motion.

Also, i know in my prelude, you can shift at certain RPM's without the clutch. Where is this RPM range on the S2000?
