Just a good driver. Most people who own cars like the CS dont know how to drive them at the limit. Maybe they are scared of destroying their car, lack of skill, whatever. Ive seen miatas CRUSH lambos and vettes at tight tracks, solely due to driver skill.

Don't forget Miatas are already 2600 lbs stock and if they are gutted and race suspension it will destroy 99% of anything it races on a race track.

In the end the miata needs more power and chassi stiffening to be successfully overtaking good drivers in F430s/GT3s/GT2s. SC would cure that. And notice I said good drivers. :-)
A note from looking at the gallery:
He's running a K series with some custom headers that look insane.
I believe this is the same gentleman (please correct me if I'm wrong) in the video which i and others have posted some time ago pitting a Honda powered Lotus Vs. the Rover (or was it Yamaha/Toyota) powered type.
I have no doubt in my mind that this beast is just tearing it up on the race tracks, ESPECIALLY long sectioned tracks.
If i had to put my money on how fast a lap this car with that awesome driver I'd say 7.30-7.40. Perhaps even faster.
I am glad however, that this individual has choosen the Lotus as the next car which he's progressed to in his seek for faster laps.
The 00:08:39 lap at the ring is testement which shows the S2000 is a fast car due to it's very basic design goals realized. Tightly Driver connected, Light weight, and fast corner speeds. The car is very capable. Coming in 1 second behind the NSX is a FEAT to cheer about. I think we as enthusiasts forget just how fast these cars are. One sees 240hp but forgets about how the car as a whole is, point being the cars chassi and component layout.
Faster cars with much more horsepower And tire lapped the ring are (not meant to be a complete list, just a raw comparison):

My speculation (and it's only speculation so don't get to worked up about it) is that with 350rwhp (which most FI people are attaining today) and taller gearing, the S2K with *that driver* could have done an 00:08:10 - 00:08:20 lap.
