My only gripe is having to find a flat piece of road. Lisbon is also known as the 7 hills city, and the rest of the country goes along the same lines (here's an advantage for residing in the Benelux!).

Well if you are careful you can still get good useful info but it will or could be hard to compare with any results obtained by others.
That is not that big of a problem because any RELATIVE differences will still shine through and you can be sure that you found what is up. It would be nice if you could use a road with a steady slope. If the slope is not too extreme you may be able to run in both directions and try to come up with what the numbers would be if the road were level.
