From www.speedbleeder.com their part number for the S2000 is: SB10125 M10 X 1.25 for all 4 calipers.

Also, roughly how much brake fluid do you need to flush (assuming you are changing fluids, not simply replacing with the same)?

I ordered the bleeder hose with my Speedbleeders (there wasn't a bag option when I ordered and I have no idea what it is). The hose is a high quality transparent silicone tube that allows you to route the bled fluid into your catch container (bag?). I'm sure that you can buy one of these for less money elsewhere, but I got it because it was convenient to order it at the same time as the bleed screws. The Speedbleeders come with sealant applied to the threads, so you won't need any of that. The thread guage allows you to check thread count (and pitch?) to insure the correct application. The folks at Speedbleeeder will determine the correct part for most any vehicle, so you won't need the guage either.
