I thought the milage was indeed locked into the ECU and that was why it was next to impossible to "roll back" the milage in our cars.

I would go with an insurance claim all the way and hope they dont screw you on the seats. Buy OEM from the factory on all parts if you get the right payoff on the check.

seats are going to be a problem because of the retail costs of them from the factory

Not just roll back the mileage, but I don't even think they can get the correct mileage to show up on a new cluster. At least from what I've read and been told, I didn't think it was possible unless it is different now. This is why I would think they might actually total the OP's car if they are unable to get the correct mileage to show up on the cluster. Maybe the dealership can do something but I really don't know.
