Undercoating, yes or no?

I too have worked at new car dealerships, and I can say unequivocally that undercoating is simply a way for someone to make money; it is not an improvement to your car's rustworthiness, for all the reasons mentioned above. Don't do it.

ok.. how else can we reduce road noise if we dont' use undercoating? please advise...

Earplugs. No really, if your driving with the top down on the highway, they help. In ear headphones help a lot too, but probably aren't 100% legal. (www.shure.com). Otherwise, maybe a hardtop. Eitherway, convertables are loud.

With all of the other noises from this car, I am surprised noise from rocks hitting the bottom is an issue.
