I don't believe there is a limited number on hardtops, not a lot of folks have it or need it.
There's probably quite a few S for sale in your area because it's winter now.
Don't have any cons, except if you plan to drive the car in the winter, you will need to get winter tires!
If interested, I'm selling my Silverstone 2001 S2000 with a Vortech Supercharger. Asking price is $26,000/B.O.

Anywho here are my thoughts, I'm in the same position as you, in a year or so I'll be in the market for a used 01-02.
PROS:
- 9k redline
- Honda Reliability
- Convertible
- Leather Recaro
- Handling
- Xenons standard
- Eye catcher
CONS:
- No torque
- People want to steal your seats
- People probably want to vandalize your car
- Not a drag car
- Got to be a high roller to mod
- High output engine, engine life??
- Insurance if your under 25 like me
S2k owners, correct me where I'm wrong since I dont' own oen and actually have never driven one, this is just information I've gathers talking to various owners and reading up online.

My wife and I are having our first baby. My S just isn't really in the equation now. I need to sell it to get something with rear seats. No longer just my wife and I now, we have a little one going with us everywhere.

2. Yes they do, buy some seat locks and park in well lit areas. Or buy a hardtop.
3. See #2
4. No its not. Most of us don't view that as a "con"
5. Buy used mods and shop carefully, you can pull it off
6. There have been a few that have gotten way up there in mileage; buy an extended warranty (at your own risk with mods) if you're worried
7. Yes, it kinda sucks. I'm 23. Granted insurance is actually $25 less than it was on my celica. Get married and get older

Good luck! It sounds like you ought to test drive before you make your final decision, but you seem to have a good understanding of what you're looking at.
