"Recommends" is the key word.You should use the weight of oil that suits your location,style of driving and condition of car.
I personally use Penn Plat 5-30 in all the cars listed below.

you can even go with Castrol's 0w30 German made. It's an excellent oil, it starts out on the thicker end of the 30 weight viscosity which I think is perfect and better than most 10w30's or 5w30's. If I wasn't running my preferred 5w40 oil, the Castrol GC would be my next choice.

If you live in southern Florida either would be fine. If you live in a colder climate and want to go down to 5-30 for cold start protection I would recommend a synthetic. My theory that I have discussed on BITOG is that the 30 is crucial but that Honda did not want to force s2000 owners to buy synthetic. 5-30 dino oil tends to shear out of grade whereas 10-30 is not as prone to do so since there is not as much of a spread between the two numbers. By specifying 5-40 for colder climates, honda insures that you buy a syn since there is no dino oil that has that broad of a spread. I don't know why they didn't just say 5-30 syn for all climates. Perhaps someone smarter than me can chime in.
