So if I break traction in first gear (not near any other cars) the revs hit a wall. Shouldnt it rev up to redline? It has happened at 6k and 7k.

I was doing some donuts in the rain and it would rev to 9k. Do this put the car on 4 jack stands and redline first gear. See If it cuts off or not.

7k is the cold motor rev limit, so I'd start there and figure out why the car thinks its cold. Pull any pending codes too.

I thought the cold rev limit was like 5k or 6k at the most.. Going to 7k is really high on a cold motor IMO.. (But so is 5 and 6k)
