Help me choose diff fluid

How do you know your tranny has been taken apart ?. If it has been previoulsy touched it could have been serviced under warranty for one of the TSB's that were out, or the clutch may have been changed. Not necessarily a bad thing.

SAE 110 in today's fluid classification occupies the thicker end of the original SAE90 spectrum when the S2000 was first engineered. They reclassified fluids since the S2000 was first engineered, and 110 was introduced into the classification as a new range. When that happened SAE90 was limited to the thinner end of the previous SAE90 range, with 110 occupying the thicker end of the range. I think today's 110 better matches the old SAE90 spec. That is not to say that there is anything wrong with today's 90 weights. They tend to be on the thinner side of the old spec., though they may work perfectly fine, particularly when choosing a high end synthetic fluid.
I doubt it makes or breaks anything, but I used 75-90 because that was the first choice on amsoils website when I ordered it and typed my car info.

Perhaps Ill try something thicker as I dont really drive much in the winter months.
