Default Idle revving? And coolant?

Hey guys just checked out an s2k and prty much confirmed the purchase. Im going to check it out again on saturday and do a test drive and use an obd2. But when i checked it out today I pressed the clutch in when it was idle and it started revving up and down from 1-2k for a min or two after i let go of the clutch. Ive heard it could be due to a dirty idle air control valve, but it happened when the car started from prty much a cold start. Any thoughts? Is it a big deal? Or just a quick clean. The owner said he hasnt experienced that bc he doesnt usually idle it for long before heading out. Isnt that not good? I also took a look at the coolant and it seemed like there was no liquid in there in between the min and max line. I did not open the cap to check so I might check it on saturday. Thank you in advance! Just trying to make sure I am making the right purchase.

Immediately driving off after a cold start is perfectly fine as long as you don't let the revs/load get too high while the engine is still warming up.

Sounds like there is a vacuum leak on the intake manifold / throttle body system. No self-respecting S2000 owner would let their overflow tank run dry, if it is dry no telling what else was let go. I would check the rad to make sure it is at least full.

it did only happen when i pushed the clutch in and released. Not sure if that makes a difference. Everything else looked good but will need to double check the coolant.

To help you assess the car we need a LOT more information. What MY? How many miles? Prior use history? Modifications? Accidents? Body panel numbers present? Condition of top? Repair history? Pictures would be a big help, including the engine bay and the undercarriage if possible.
