I wouldn't put any GL-5 rated fluid in the tranny, even if it's dually rated GL-4. Not guarenteed to be yellow metal safe and can damage the syncros. Some people have used GL-5 fluids with brass synchros with no issues, but it's not worth the risk to me.
As for differential fluid you have more flexibility. Anything that meets honda specs should be fine. However I would be wary of the competition fluid if you plan to drive your car much on the street. The competition fluid may require more frequent changes than a more streetable fluid. The competition fluid may protect 'better' but may not last as long.

If you want a good track oil try NEO synthetic. They're located in Signal Hill. A lot of professional teams in Japan and europe use their oils. If you call baker precision ask for Hung he'll help you out.

Motul oil's are superb. Myself and a number of highish BHP Impreza guys use them.
Smells like bubble gum
In the Honda I use 5W40 V300 oil, but we have colder climates in the UK than most in the US.
Not sure on the gear oil as I use Silkolene in that.
