Check your oxygen sensors. I had a burnt out secondary / primary and there were not throwing codes. It was a intermittent failure and my car was doing similar shenanigans as to what you were describing...

 

So I tested the sensor with a voltmeter to see if it was working and the sensor does work. When testing the sensor on ohms on the voltmeter the number changes as I move the throttle back and forth so now I know the sensor works. I also tested the wire harness plug to see if it was getting power and it is I’m getting 5v like it should. So why does it give me that p0122 code

 

I had just recently changed the secondary o2 sensor about 2 months ago

 

I'd definitely clean it, clear the code, and hope it doesn't pop up again.
