If you pull the switch you won't be able to activate cruise at all...

You guys are are off just a little bit. There are two switches on the clutch pedal. One is for the starter inter-lock and another one is for the cruise. The inter-lock switch is "pushed" to close the starter circuit. This happens when you have the pedal to the floor.
The cruise defeat is a "clutch pedal position" switch (kind of a sensor) and when the cruise control system senses that the pedal is no longer at the top, it defeats the cruise.
So, during normal driving when the clutch is up, the starter interlock switch is always open and the "cruise" switch is always closed.
As the starter inter-lock must be closed to let the starter crank, all one would have to do is cut the two wires coming from this switch and twist them together.

ps. DISCLAIMER: I am NOT advocating that anyone does this.

ABSOLUTELY! A great way to do this would be to use a "self stripping connector tap" and punch out the dead end side so both wires just run right through the tap. Then, if you ever change your mind, you remove the tap and electric tape the small insulation breaks. Least pain, easier gain.
