Temp Gauge Problem

Heres a little rundown on whats going on. After driving my car the other day for a while i pulled into a gas station and noticed coolant coming out and the engine steaming a little. Temp gauge never went over 3 bars. I found the bad hose replaced it and got back home with the radiator full. Im not worried about a headgasket issue as the car never shut off and never ran hot. I had a scanner hooked up to it temp never went over 179F. Basically my question is do i maybe have air the system? Is that causing the Temp on the dash to go from 2 to 3 bars and than back to 2 when im crusing? Could be the temp sensor itself. BTW i have NO oil in my radiator so im pretty sure i need to bleed the system. I was reading a little on the process of doing so. It was very clear how exactly do i bleeed? Put the heater on? drain the radiator and than open the bleed screw on the firewall or the one next to the throttle body? Thanks for any info i appreciate it.

Hmmm, I dont think air in the system would cause your temp to go down. Usually if there is air in the system, it would cause a spike, often resulting in slight overheating and then a sudden cool down. Thats usually what I have run into when I had air in the system.
The IACV hose the longer one of the 2 on top. I posted on S2kca.com and bleeding the system was everyones answer over there. When i drove the car the temp would go to 2 bars. At a light it would go to 3 bars.
