Default The BBQ Grill thread

Post your favorite recipes.

Grill Prawns -20-25 prawns, with shell on, de-veined

Dip in olive oil, then dip in coarse sea salt

Grill each side for 1 minute until shell splits.


Dipping Sauce

2 tbsp fresh cilantro minced
2 tsp white sugar
2 tbsp fresh limejuice
2 tsp minced garlic
1 tsp chilli flakes

Eat and enjoy!

Go diving. Get some live Florida lobsters. Find a beach. Heat up the charcoal with no grill on top.
Wait till they're lit. Use them at their hotest, don't wait till they're all white and cooling.

Melt some butter and garlic together. Throw the lobsters right on the hot coals. they don't crawl long. Wait till the shell turns color. Rip them apart with your bare hands dip them in butter. Couple ears of corn and some small red potatos in tin foil. MMMM it gets no better.

Octopus tenacles are great that way too.

Rib eye tenderloin rolled in kosher salt.
grill 15 minutes on each of the 3 sides.
don't fork, use tongs when handling so you don't lose juices.

cut about 1/4-3/8 inch slices

Marinade in "dale's" Low Sodium Blend.

Grill.

Enjoy.

I second the chops on the grill.

We marinate them in fat free Italian dressing, throw in some extra pepper, maybe a little garlic powder.

The chops are always juicy, never dry.

It's my favorite way to cook chops.

Fish on the grill.

Get a piece of haddock or cod, or whatever white fish you like. About 3/4 pound or so.

Spray aluminum foil with Pam

Place fish, some onion, green peppers and some canned tomatoes (drain most of the liquid) season with pepper, or your choice of spices. Wrap it in the foil, and place on the grill.

The fish basically steams and picks up the flavor of the tomato and other ingredients. Depending on the thickness of the fish, it generally cooks in about 20-25 minutes.

You have often said that you don't cook much and that Rick does most of the cooking.

Do you grill?

I cook fish.

There are a few dishes that I still make, fish is one of them.

Rick does most of the grilling. He is a better cook than I and he enjoys cooking. He can have the job. I'll clean the house.

Sweet& Spicy Maple Plank Salmon

1 pound skinned or unskinned salmon fillet
1 cedar plank I find them at harry and david
1/2 c. chopped shallots
2 Tbsp. Maple Syrup
1/4 C. BBQ Sauce (Mesquite or Smoky flavor preferred)
1/2 Tbsp. red pepper flakes
1 Tbsp brown sugar

Stir together all sauce ingredients. pour over salmon fillet, cover with plastic wrap and marinate overnight.
next day: soak the cedar plank in water for 2--4 hours. Heat grill about 450-500 is good.
Place the marinated salmon onto plank and pour half of the remaining marinade onto the salmon.
Put the plank directly on the heated grill.
Close the lid turn down the heat to medium and cook as slowly as possible (roughly 25--30 minutes).
Pour the remaining marinade over salmon halfway through cooking.
