A local restaurant serves a pretty good , rather moist, corn bread in the complimentary bread basket and I'm not a real fan of the corn bread. Same issue many mentioned, just too dry.

When I was a kid, my Mom used to find other uses for corn meal. The corn meal muffins slathered in butter were OK, as far as cornmeal pancakes, no thanks, I'll eat Cheerios.

We use the recipe on the back of the Aunt Jemima Cornmeal that we buy:

1 c. cornmeal
1 c. all-purpose flour
2-4 tbs. sugar
4 tsp. baking powder
1/2 tsp. salt
1 cup milk (we use skim)
1 egg
1/4 c. vegetable oil

425 degrees in an 8-inch square baking pan (or individual muffin tins) for 15-18 minutes.

Mmmm...

Definitely best when hot, but even after a week in the fridge, it was delicious warmed up with a bit of butter.
