Jonas - sugar in cornbread, that must be a midwestern thing, not in the south, also skim milk, no no, only buttermilk

This is how I was taught to make cornbread:

2 c. cornmeal
1 c. all-purpose flour
4 tsp. baking powder
1/2 tsp. salt
1 1/2 cups buttermilk (use a some water is batter is to stiff)
2 eggs
1 stick butter

Batter should be thinner that a cake batter.

Pre heat large cast iron pan with 1/2 butter in 425 degree oven (don't let butter burn), pour batter in hot pan and bake for 15-18 minutes or the top is golden brown. Take out and spread butter over the top, cut and enjoy.

Varitions:
1. Cracklin's or cooked bacon. Use the drippins instead of butter when pre-heating the pan. Be careful with bacon drippins don't use to much
2. Use a small can of cream corn and adjust liquids
3. For Mexi Bread, add 1/4 cup chopped onion and Japlapino Pepper (to your taste)

We had a local barbecue joint that has butt kickin' corn bread. It is moist and it is somewhat sweet. It suppsedly has pudding in it.

Mix all ingredients, pour into prepared pan and bake as directed on the back of the Jiffy Mix box

corn bread with lobster bisque or lobster chili is good too. I like that pudding idea, I'm going to try it.

Vyk's secret ingredient: Large cast iron skillet/pan. Heat some oil in the bottom, sprinkle some dry cornmeal into it, add ingredients. I don't think everybody has one of those. Consider no substitute.
