I guess you are a meat-loving chili person. I am, too, but like to mix it up sometimes and make the vegetarian version.

Just put on my beef barley soup to slow cook for dinner. Yum. Last night I made lemon chicken with garlic and olives. I use chicken cutlets. It also has capers, which I love. It was really, really good.

Anyone still eating out there? I found another addiction - Ghirardelli Dark Chocolate Sea Salt Cashews. Not too bad on the calories - 150 for 9 pieces.

Made a big batch of homemade spaghetti sauce last week that was awesome. I plan to make some pasta stuff again this weekend. I like making an Alfredo based sauce with sundried tomatoes and pesto to go over chicken and pasta. That one always goes over well in the house

Sounds delish. I haven't made pasta sauce in quite awhile because we (particularly the +1) are trying to stay away from pasta. I do make a really good sauce, though. Based on his mother's recipe (she's a great cook).

Deb, have you tried spiralized zucchini as a substitute for pasta?

Since goblue and I are watching our carbs very carefully, we almost never eat pasta anymore.

We bought a spiralizer and make spiralized zucchini which is a pretty good substitute, a good "carrier" for the pasta sauce.

Try it...you might like it with pasta sauce.

^ I did. I have the spiralizer and made the zucchini w/sauce. Not for me. The +1 eats some pasta and rice, but very little. For many dinners, I make meat or fish with veggies or salad and no starch.
