I need more vegetable recipes. Other than sauteed spinach or potatoes done some way, I'm down to opening cans. Dean doesn't like the good stuff like asparagas or broccoli or cauliflower or squash (get the idea?) and we try to avoid cheese so burying them in a cheese sauce to disguise them isn't going to work. Any ideas?

^ Hmmm...find some veggies he does like and make this:

Cut up the veggies of your choice (I usually use broccoli, cauliflower and green beans). Heat some olive oil in a medium fry pan or wok. Throw the veggies in and a can of diced tomatoes with the juice. Add a bit of water. Slice some (pitted - ) black olives and throw those in. Also some garlic (I use minced). Salt and pepper to taste. Saute the whole thing until the veggies are just tender (I taste as I cook). Serve over linguine with lots of grated Parmesan. Tres yummy and healthy!

A variation on the above is made with artichoke hearts, cut up, the can of diced tomatoes with juice, and the sliced black olives. Garlic, salt and pepper to taste. Saute in the olive oil. Serve over linguine. Also very, very yummy.

BTW, if anyone has any pull with a CO (Lainey???), I think the recipe thread should be pinned. If Jokes can be, then imho this should be. Anyone agree?

I don't know if it was Jim being nice or Dean who is still in super nice mode until he decides which SC to buy and gets it ordered.
