Here's something I came up with one afternoon when I was bored.
I've tried some other recipes similar to this but none were exactly like it. It gets rave reviews everytime I fix it. Even better, it only takes about 15 minutes to prepare it and about 30 minutes to cook.

NATE'S SOUP


1 can cheese soup (Campbell's)
1 can potato soup (Campbell's)
1 1/2 to 2 cans milk (use empty soup can to measure)
2 cups pre sliced potatoes ("simply potatoes" brand is good)
2 TBS real butter (unsalted is best)
1/2 cup cubed ham (sugar cured, not salted)
1/4 cup celery (sliced thin)
A pinch black pepper

Optional:
1/4 cup chopped green onions
1/4 cup grated or shredded cheddar cheese

I pored this thread but have not found enchilada recipe. Does anyone have a good enchilada recipe? I remember the best enchilada I ever had was at my high school dining room every Wednesday or Thursday, I can't remember. That was in late 70's. On that day, line would form and there has never been better tasting enchilada since. Every time I go to a Mexican restaurant, I try enchilada and none has ever been close to what I had in that cafeteria. I would get a ice cream scoop of rice and three or four enchiladas and the lady serving would pour chili over everything. It was simply the best enchilada and chili combination, I ever tasted. That was in San Antonio, Texas. If anyone has the best tasting, I know that is subjective, recipe for enchilada and or chili, please do share. Thank you.
