I copy and pasted the description off of Greddy's Oil Catch tank description.
Here ya go, hope this answers your question.
Oil Catch Tank- catches the oil and moisture in the blow-by gas that causes carbon and sludge build-up in the intake system and the engine. It keeps the engine clean even under hard driving conditions.

Blow By is the escape of compression and combustion gasses through the pistons and rings. This means sludge oil, unburnt fuel, coolant (if your shit is f#cked up) sulfer dioxide and other shit that are running through your system. The catch can helps "prevent" a lot... but not all... of this shit from getting back through in to your system by catching it inline.
Usually in a newer all motor car that's maintained properlly doesnt have a problem with this. It's the older cars and turbo cars that are creating more blowby. Basically in a newer non turbo car the catch can becomes more of a dressup part.
