Making a classic Rochester, NY garbage plate
Since it's still going to be at least a month until I can make it to Rochester to get a REAL garbage plate...I decided to make my own.
A garbage plate is a Rochester staple..."hots" places are pretty similar in variety and number to the meat and threes here. You can get a dirty, scummy, slimy plate at 3AM when you're so drunk you can barely order, or you can find one in most decent diners or blue-collar restaurants any time through the day.
A traditional plate is cubed home fries, macaroni salad, two Zweigles hot dogs or two skinny frozen cheeseburger patties, a squirt of mustard, sprinkle of raw onions and then an amazing slightly spicy meat sauce (simply called hot sauce). Then to finish it off, people add ketchup or Franks Red Hot and dig in.
Anyway, enough of the history...on to the photos.

Starting the meat sauce. Low quality ground beef, some onions and garlic.

The recipe I followed made the sauce a bit too heavy on tomato, but it was still delicious. Just not a traditional hot sauce.

Frank's Red Hot - a TOTAL staple for a plate. Also the eggs are to make my own mac salad. I couldn't find any premade at the store; maybe it's a north eastern thing?

The burgers for on top. These are a whole lot thicker and more substantial than what you'd normally see at a plates place, I just didn't want to buy a package of frozen patties.

The finished product...delicious! This is before I added the Red Hot....yum.
