i'm looking to get a personal grinta but just had some questions... is just a quick release needed for bolt on installation? also do you think a 350mm is too large for our cars?

^ if you would like to remove the steering wheel, then you will need a quick release, only a hub is required to install an aftermarket steering wheel. 350mm is same as stock so it's not big for our cars, if you want to go smaller, then 330mm is a good size.

Yes, you will need a Worksbell short hub.
