I'd wait if you can, August is the hottest/most humid month around here, and it sucks pretty bad then.

In March I made the run to Shiner and met the Houston S2000 crew for the brewery tour. After some mapping and planning I did a rally stage route to avoid most of the boring highways. The county roads in the area are twisty but there's a catch. Most of them go from pavement to long streches of dirt. Fun if you're a rally driver but be prepared for caked on dust. It hasn't really rained in ages so I'd stick to the highway. The tours are offered twice a day on weekdays only so it helps to have a flexible work schedule. I'd agree with Chris that Fall is a better time to visit. Otherwise keep the top up and crank the AC.

Shiner is about 100 miles from Austin, and pretty much in the middle of nowhere. October would be a much better month, and unless you have a special fascination w/ Shiner, I'd spend my TX time elsewhere, like Austin for city fun, &/or in the Leakey/Vanderpool area if you want killer twisties.

Not really that close to Austin, the roads aren't that great and the restaurants in Shiner are just plain bad. Might make a nice side trip on a weekday drive to Houston. The destination is worthy but the journey, well not so much. Had fun meeting the Houston group when I went, good company.

Try a Shiner Smokehouse Beer this summer...
