I've used Dicksons for Tyres before, they were excellent. Not sure if it is the same Dicksons though! 
You might find (if it still exists) that there are some serious modders Scotland based on hondatech (None that i know of with S2K's though - tend to be in the Civics etc - proper ricers!!)

I've actually seen a fair few starting to appear recently mate,i'm on my second.I'm up in kinross often picking up my sister in law from work,i'll keep an eye out for the nurby!

My spin on it is this...
Ask the dealer if your proposed mods will affect your warranty.
I think you will be ok on the brakes, but anything that fails whcih is brake related they may not want to help you with Unlikely anyway!
If you do any exhaust / intake mods they might get more twitchy. It sometimes depends on your dealer and how clued up they are. The better ones will let you off. The problem is that if you have an engine failure, they can just turn around and say they wont help you as you invalidated the warranty. You might be fine with Mugen stuff, being Honda's tuning arm.
What has been done (and its hassle) is put the stock exhaust and fitler back on for service.
As for mods, the brakes on the S are better that pretty much anything ive driven, and there is nothing wrong with the 4 pos calipers at all IMO.
Get some pads, hoses and fluid. Discs are optional IMO but again they can be improved. I didnt like the EBC's I had.
On the noise front - I prefer intake noise much more than the exhaust. If you put an exhaust on, most will drone unless you also decat it. With a new intake, its not intrusive until you put your foot down.
Again, you are hrad pushed to beat the stock airbox for power, but if you want noise then go for either an AEM (bumper off) or the K&N.

A new set of OEM pads and disks with fresh brake fluid would probably help.
As for you requirement to need more pedal travel, personally i like to be able to modulate the brakes rather than treat them as an on/off switch.
