So as a relatively new S2000 owner what actually did the owner in this clip do wrong, this is a serious question too I'm not taking the pee?

It looks like very little steering input, whilst on the power in dry conditions.

Possible causes:
Distracting air freshener thing - should banned
Having the invisible man sitting next to you wearing only trainers - should be banned
Cutting the corner?

He made the most common mistake.

The car started to slide, so he tried to correct it but overdid that and the car then span in the opposite direction.

Here's me doing a similar thing, except I make two over corrections before spinning the car.

Obviously, I am on a racetrack, so there is no kerb to hit and turn the car over.

Isn't the best way to correct back off and let it straighten up?

Yes and no. You have to be very quick and reduce the steering angle then get back on it again rather than going for a full dab of oppo, go-kart style. Letting go of the wheel will produce a similar effect, and reduces problems caused by drivers overdoing it, so it works well for most.

The most important thing is that you generally don't have room to recover, more so on roads that are 1 1/2 cars wide as was the case here.
