Default Question about oil appearing in coolant

Hi, I'm after some advice. My S2000 powered Sierra rally car over heated on the start line of a rally and a large amount of steam appeared under the bonnet so I turned off the engine. After it had cooled down had a quick check over it and there was a few mm of oil on the top of the coolant level. It turned out the thermostat had failed to open.

I have a few questions:

So I'm guessing the head gasket has gone?
When I get the head skimmed (and it takes off 7 or so thou) can I use OEM Honda head gasket (which is 30 thou) or do I need a thicker one?
How much can be skimmed of the head? When does the valve timing need to be altered or checked?
What diameter bore should new head gasket be? I'm running standard bore/pistons. So that's 87mm? I seem to see 88 and 89 a lot on the web.
Where and how do I measure the cylinder head height?

The service manual contains all the info you need. Google will show you where to find it.

From page 6-32:
Check the cylinder head for warpage. Measure along the edges, and three ways across the center.
If warpage is less than 0.05 mm (0.002 in.) cylinder head resurfacing is not required.
If warpage is between 0.05 mm (0.002 in.) and 0.2 mm (0.008 in.), resurface the cylinder head .
Maximum resurface limit is 0.2 mm (0.008 in.) based on a height of 105 mm (4.13 in.).

Cylinder Head Height: Standard (New): 104.95- 105.05 mm (4.132-4.136 in.)
