I'm looking at a set of rims that are 18X8.5 +45 all the way around. I don't want to rub AT ALL or affect performance...

It would depend on how low you were. At stock height, you would only rub very slightly with 245 width tires. However if you want it 100% rub free under all circumstances, you would need to roll. And if you're doing that, you might as well run 255 width tires, since there would now be plenty of space for them.
