Need New Tires Stock AP1
This is for my dads S2000. It is his daily driver in all weather except snow. He has S02's on now and has been using those since new. They do no provide enough traction in the cold and rain and wear very quick. I am looking for a tire that will do those better, yet keep a little bit of fun in the S2000. I was looking at possible getting General Exclaim UHP's, I have them on my 06 Si, but it looks like they are not made in the right size, there really don't seem to be many tires available in the right size for an AP1. Any recommendations?

I'd give the Dunlop Z1 star specs a try. I love mine, they have awesome wet traction and should wear just a little slower than the S-02's. They're a lot cheaper too.

According to this thread:
https://www.s2ki.com/forums/index.php?showtopic=48572
I should get 205/55/16 in the front and 245/45/16 in the rear.
This just makes it harder. The star specs are not available in the rear size
These are the tires available in the recommended size:

The Fuzion ZRi looks like a decent choice.
Or I could go with honda specs and have a few more choices.

The goodyear eagle F1 sticks out as a decent choice

Yes, ignore the stickie.
The best tires for the AP1 are available only in 225/50-16 rears, buy the best tires and don't worry about it.

From your descriptions, you seem to need an all-season tire for your dad's car: Good in the rain, good in the cold, longer lasting. You won't find that on a Summer tire.
But at the same time, you don't want to give away too much grip. So you need a High Performance All-season tire.
My vote goes for the Bridgestone Potenza RE960AS. I have them on my M5 and love them. And that's after switching from PS2's.
But the main difference you'll feel on the driving dynamics won't be overall grip, but sidewall stiffness. At least that's what I felt when going from the S02's to the RE050PP's.
RE050PP have similar level of dry grip, but they are much better in the rain. They don't like cold weather though. Just as expected from a summer tire. And they wear out just as quickly.
You'll be hard pressed to find a tire with similar side wall stiffness as the S02 and still give you good grip in the cold.
A Bridgestone Engineer told me to run 2 PSI higher than the recommended pressure on other tires to overcome this feeling (he was talking specifically about the RE050PP).
I wouldn't sweat much about the thread recommending 245's in the rear, though. According to that same Bridgestone Engineer, those 225/50/16's on their tire line, were specifically designed for the S2000 and Porsche 944.
I went with RE050PP 225 in the rear, I could not tell a bit of difference in the balance of the car.

Ok I am trying to decide between the Bridgestone Potenza RE960AS and the Goodyear Eagle F1 GS-D3.
I almost would feel weird putting all seasons on a real sports car like the s2k which kind of pulls me away from the RE960AS. And btw this is in NC so we are not talking about winter weather like all of you up north have : ) I do feel like the RE960AS would be better in the mornings if it is cold, and they would last longer, I just don't know if that is worth the dry warm weather sacrifice.

Why would you tell him to ignore sound advice posted in the sticky and tell him to put tires that are too small on the rear? Can you say oversteer? That information was stickied for a reason.

I think you need a semi sticky tire - I had all season tires on my car when I first bought it and it was scary in the wet and the dry.
Toyo Proxes T1 is not a bad street tire if they do it in ap1 sizes.
