I got 30 mm front fenders and I'm getting ready to buy some rims but don't know what offset... I want to run 245 to 255 40zr in the front 17 inch all around..

With the wider tires you may need to roll the fender lips no matter what wheel it is. I would look at a 17X8 or 17X8.5 and have an offset around a 55 or higher for the most clearance.
