The width of the wheel, for a given offset, will not affect where the tire is. THUS, whether the wheel is 7.5 or 8 doesn't matter. What matters is the TIRE width and WHEEL offset. (Of course the tire needs to fit the wheel.... no 295s on 7" wheels.)

The handling was affected enough for me to get rid of the wheels (ce28's) and buy some that fit better. Hope this helps. Good Luck

Heavier steering?
Low profile tire bumpier ride?
In my case the front track width changes +20mm and the rear +34mm if you go by the wheel centre.

I highly doubt you will rub at stock height. I am running 18x8 and 18x9 with +45 all around stock height and have had absolutely no rubbing issues. Here are some pics:
