I've done my research and I know that the stock offset for the '00 s2k is
16x6.5 F.
16x7.5 R.
Question is simple...will this work w/out rubbing
18x8 F. w/ +53 or higher offset on a 225/45/18
18x9 R. w/ +50 or higher offset on a 255/40/18
Im worried about the 8-9 width..should I go 18x7 (f) and 18x8

you'll need higher than 50 in the rear to work especially with 255s.
fronts look good to me.

what wheels are you getting? for a 255 i would suggest 9+55 in the rear

to throw a 255 back there on stock fender, you neeed at least a +63 or higher i believe

Your overall diameters are about 1" larger than stock. They should be 224/40-18 front and 255/35-18 rear.

With the wheels you list you would not want to go wider that the 245/35R18 and even those are going to be tight.
