They'll stick out a bit. You should also get staggered rims for staggered tires.
"Ideal" offsets for any diameter wheel should be no different than for OEM wheels. It's the tire aspect ratio that must change to make it all work.
OEM 17" rims are 7.5" wide in front with about 55mm offset. 8.5" wide in rear with about 65mm offset.
Would a 18x8 with a 44 offset all around work on a AP2?
What is the ideal offsett and width for a 18's???

If you are going to run the same wheel all the way around I think 18X8 and 44mm offset will be a problem. You would need to stay on the narrow side of tires and probably roll the fender lips.
