I remember reading up on how to equate the adding of a spacer to the change in offset but cannot remember it for the life of me. I was wondering what is the equation (or if not equation just simple explaination) of take a wheel with X offset and running Y mm spacer to get the new offset number? I know it will cause the offset to go lower but I can't remember how much (if it is either simply by the number of mm of the spacer or if there is something more involved.)

Adding 1mm of spacer subtracts 1mm of offset. Direct ratio.

yep, for example if your wheels are +65mm, and you run 5mm spacers, your wheels effective offset is now +60mm
