I bought 17X7 wheels with +48 offset for the front and back and slapped some 225/45/17 tires in the front and 245/45/17 in the back with stock shock setup?

It would "work", but they'll stick out a bit on the front and a bit more on the rears. A 225 tire normally sits on a 7.5 rim (as in the OEM 16" rim), so a 7" rim should be too much of a problem for it. People have put 245 on the same 7.5 rim, which is already a bit of a pinch but still works. Putting a 245 on a 7" rim is pinching it in even more. You may have to reduce your tire pressures a bit to minimize excessive center tread wear (this may apply for your fronts as well). Also, on these narrower rims, the car may feel a bit "softer" when cornering.
