Galio - your proposed offsets/tire sizes would be very close to ideal.
johanirawan - your setup would rub so bad it wouldn't be funny. Even if you stayed at the stock ride height you'd probably have some issues if you drive the car moderately hard.
a three to four inch drop on an S2000 is kind of silly IMO.
You might be able to get away with your 2nd set of specs if you go with more narrow tires but 225s in the front dropped 3-4 inches will rub the inner fender liner for sure.
In this picture my car is lowered ~1.75 or 2.00" 18x8 +49 offset in front with 225/40/18s. I am going to have to raise it up a bit in the front because of tire/fender liner interference. It doesn't rub on the lip of the fender but actually rubs on the inside of the fender well...

The SSR setup in the picture is my street setup. My "go" (autocross and track) setup is 17x8 +49 17x9 +62 with 225/45 and 255/40 Victoracers. They work beautifully with no clearance issues. What you posted is pretty much the same so I believe you'll have great results with it.
If I had my way for a performance setup - I'd have 17x8 fronts with about +52 or +55 offsets and 17x9 or 9.5 rears with +65 to +70 offsets but that would probably be a custom ordered wheel.
These are the 17" 225/255s on the track...
Tireguy's setup is very cool. Might be a bit big/heavy for the track but supercool for the street. I can definitely feel the extra weight of my 18s vs. my 17s.
