well toro isn't considered a "high quality" cut of tuna. it matters i guess in preference. for me, i perfer the "chu-toro" over the "o-toro" cuz the higher fat content in "o-toro" makes the fish sometimes really stringy. "chu-toro" has a more delicate texture and melts right away in your mouth.
when in doubt, order "unagi" cuz its the most protein tasting meat in typical sushi.
