I work at the Marriott right there.
For bars, hit up Downtown Fullerton or go to Downtown Santa Ana. (Broadway and 4th st.)
ESPN Zone is pretty cool if you want to go watch sports on the huge HD projection screen they have there. The beer is really pricey though, like $10 for a big glass.
There's the Anaheim Garden walk, which they just finished building a few months back, it has an Imax theater there and some restaurants like PF Changs, Bubba Gumps, & Cheescake Factory.
For shopping you can go to The Block (closest, kind of ghetto) Main Place Mall, (little further) or South Coast Plaza, like others have said (Furthest but has upscale shops and beautiful women ) There's actually a shuttle that drives you straight there, just ask your concierge what times they come by to pick you up. Enjoy your stay in Cali.

I might ask the foyer about the plaza, wouldnt mind seeing it. Hot girls is a bonus lol...
