I'm in your position, with 4 cars costing $115K. Over time I plan to upgrade them one at a time.
Currently I own:
Trooper
Sienna
Passat
S2000
I can see :
MDX $40K-$45K
GS350/530i/M35/RL (or such) $50K-$55K
Z06 or Boxster coupe

A small fleet of cars without too much niche overlap! A vehicle for every mood/season/occasion.
I like your picks!

OK, Me and my woman are in the same boat DINK. And here is our fleet
1. 2000 Ford Ranger 4x4 4.0L Pulls up to 5500lbs, and can go almost anywhere with the locking rear end. I think this was 24k ish new.
2. 2004 Passat TDI. We paid 29ish.
3. 2005 S2000. Pad 34k
We drive about 16k a year between the 3 cars and the truck get driven every day. And love our fleet of cars since we can do anything we want with them.

I like having the "right tool" for the right job.
On a cold, muddy, salty, slushy day... I enjoy slogging through the crud in the truck... don't have to take off the coat to fit in the seat, don't have to wipe my feet before getting in....
Cars to me are like shoes (and not in a ghey way):
I wouldn't wear my gym shoes to work, and wouldn't wear my work shoes to play ball... Could find some sort of cross training shoe, but would be a compromise by definition.
Besides, it's fun upgrading one at a time! New toys!
I sat in a 2005 Boxster S today. Looked great! Maybe a used 2005 in 2008?
If you like to tinker and you like fast cars, why not use the $62-72k and buy an Elise, swap the Toy motor for a Honda (F, K, or B-series).
o/w, C6 Z06 (maybe), or 997 Carrera (stretching the dollar a bit here).

Currently, my wife and I (no kids for a while) have:
1. truck for nasty weather/hauling crap/towing crap/carrying extended family.
2. luxury sporty coupe that can fit 4 adults with luggage/go to nice dinners/quiet with good gas mileage for road trips
3. summer sport roadster for spirited drives and cruising in the city (to be seen a little, I admit it)... driving feel and pleasure are paramount.
I was looking around to see what I could upgrade to on a reasonable budget.
If you could buy three cars/trucks (must pick 3, new or used okay) that would fill these niches for a total of ~$150,000... what would you pick... and what would replace the Honda?
1. 2005 4runner limited w/ V8, navi, and 3rd row seats: $36k
2. 2005 BMW 330 coupe $42k
3. ????? for <$72k
or if #2 is a 2005 BMW M3 for $52k, then <$62k left to spend on the #3 car.
The question is: what can fill the roadster niche in that price range?
Was thinking new Boxster S or maybe Elise... it doesn't have to be particularly functional. Maybe an SLK55? Z06? Used 911 cab/c4s/tt?
Thoughts?
What struck me is how well our little roadster fills that particular niche... and how I'd have to spend twice as much to match the performance of an S/C S2000....
I'm curious because there have been posts from SLK55 and Z06 owners saying that while they love their cars, they still miss their S.
Am I going to be mad that I spent twice as much money to replace a car that I'll likely miss anyway?

This is easy, ultimate stable if I had the money:
Utility Vehicle: Nissan Titan LE Crew Cab - $29,400k
Family Car: Acura RL - $48,900k
Sportscar: Porsche 911 - $78,400k
For a total of $156,700k spent in my ultimate garage.

Yes! That is exactly the situation.

Like Z06 and keep the S2000.
The problem is if there is too much overlap like a S2000 and a Boxster would be a lot like having 2 very similar cars. Also an Elise + S2000 doesn't work b/c they both have weak(ish) 4-bangers that you have to rev. That would be a problem only b/c one car you'd like better and end up driving most of the time.
Since the S2000 is a vert, it's tempting to keep it and get a coupe, or sell it and replace it with a vert or a targa at the least.
Here's another thing I've been toying with, lets say the Z06 costs $65K if I trade in the S2000 for $15K-20K that leaves me with $50K out of pocket for the Z06. I could get a Boxster coupe or M3 while keeping the S2000 for the same money outlay.
