I think tan interior should be optional color on every S. I can't think of single color that it would look bad on and it's probably much cooler temp wise than black or red.

If you look in the closeup of the guage cluster I posted, you'll see the temp guage embedded into the display. I'm sure it would be a PITA if not impossible to do it.
Presumably a whole new instrument panel would have to go in. Of course you could always go aftermarket
