Any tracks in NC SC or VA???
NOT drag strips but REAL tracks.. like road course type... I feel this would be much better than turning the public twisties into your own private raceway
Let's see....
You've got Virginia International Raceway

Carolina Motorsports Park
Robeling Roads & Road Atlanta although not in NC,SC or VA are still nice choices.
I'm not sure if there are age limitations besides the license & insurance issue, but I'd check.
Here's a nice list of Race & Driving Schools
My personal recommendation is the Jim Russel School, Donington UK. You can not beat it
The Panoz School also gets high marks.

There are a few groups that host HPDE (High Performance Driving Events). These groups usually have host an all-weekend event, and are broken down into run groups based on experience level. You will typically get between three to five hours of track time over the weekend. Most HPDE organizations require you to have a valid drivers' license and proof of insurance on your vehicle (they will have their own insurance for the track and the event itself). Here are a fellow of the local organizations:
NASA - National AutoSport Association: http://www.nasaracing.net -or- http://www.nasaproracing.com
SpeedTrial USA: http://www.speedtrialusa.com
CarGuys Inc.: http://www.carguys.com
Also, don't forget about Summit Point Raceway: http://www.summitpoint-raceway.com
That should take up your time for a few hours.

I hope Carolina Motor raceway will let me drive it only being 16... I figure most places will have 18 min. age limit... I will call
If they say I can drive on it... Scotty and I will have a rd trip!

Virginia International Raceway and (I believe, but not positive) Carolina Motorsports Park in Kershaw will not allow S2000's with the stock hoop roll bar. The problem being, the top of the roll bar is a little lower than the top of the helmet for most drivers. This is a track rule independent of whose running the event... I know I 've tried to run several events at VIR through different groups, with no luck. Also, these are relatively new rules. I drove my Contour SVT at a TrackTime driver's school last summer, and there was an S2000 there with the stock roll bar. Evidently someone at a track day at VIR in a miata with hoop roll bars was hurt when it flipped sometime last year, so they instated this rule... I didn't find out about it until AFTER I had bought the s2k... sigh....
