I hate to say it, a lot of bigger employers want proof that you survived an undergraduate degree. . . but that's a separate rant (says the guy with a BMEd).
Undergrad degrees aren't viewed so much as proof of knowledge, but proof of sticking with something for an extended period. It's easier for them to evaluate this as a measure than trying to translate your experience into an equivalent value...

Maybe I'm projecting the situation I'm in, but it would seem to me that you have to prove your value to the company, and specifically to the hiring manager. Most first-line managers at bigger companies have pretty substantial blinders. . . and so long as there's a ready supply of applicants, they can get what they (think) they want.
That's where the handjobs and treachery come in.
