IANUT, but:

It has to do with the presence / quantity of myoglobins. Red meat has a lot, white meat doesn't. Presence of fat has nothing to do with it.

Pork is pork.

As WSB said, it's a marketing thing. Lean pork is lean. Fat pork is fat. Use lean meat, that's the rule.

White chicken is odds on your best bet, but using cubed lean pork chop ain't a crime. Ham is good stuff too.
