We had bacon-wrapped pork loin last weekend, it was excellent: smoke it at 370 - so that was interesting (I usually smoke at ~225F)

I made Bacon Wrapped Scallops the other day & they turned out yummy!

I had a chicken sandwich with bacon today it was goooooooooooooooooooooooooood. Haven't had bacon in a long time.

I've got a chunk of Italian bacon to use up - Pancetta - cubed up and ready to pan fry. We will mix it with some pasta, carbonara.

Not really in carbonara, but my wife and I love pasta with peas.. We have made alfredo sauce in the past with some peas, not really following any recipe but we really like peas and just whip it all together. In the summer when peas are at their peak season we toss them in with red sauce.

At my favorite Italian restaurant in my home town I used to get a dish they had Tortellini Carbonara. It was cheese tortellini in an Alfredo sauce with bacon and peas. We went on a family cruise years back and every night for dinner we got a few side dishes of carbonara I think they used fettuccini for theirs and it didn't have peas.

That sounds good too, I really like it and you can certainly make it a number of different ways. I hope to make some this weekend, I might make it a couple times a year , not too often.
